Human taste buds cannot identify protein, whether it is from meat or plants. What makes animal meat taste different is the presence of heme. This is normally found in blood and when cooked it gives a meaty aroma. But in plant based meats the heme comes from legumes, which have a far lower carbon footprint than meat. They taste so alike, even conservative meat eaters could not tell the difference, and thought the plant based meat tasted more like meat than meat.
